Wedding Cake Juice

This juice goes out to lifelong friends Helmi and Tori, who were married last weekend after many fruitful years together. The marriage of lavender and coconut in this recipe is sublime, just like love!

  • 1 small Fuji or Gala apple
  • 1 medium PearĀ 
  • 3 inch length of peeled cucumber
  • 6 fresh cut jicama sticks
  • 1 teaspoon shredded baker’s coconut
  • pinch of dried edible lavender

Quarter your apple, remove core. Do the same with pear. Juice your cucumber and jicama last, as they will help push the pear through. Yields about 6 ounces. Stir in one teaspoon of coconut, and garnish with lavender.

The marriage of lavender and coconut will knock your socks off! It can be tricky to find organic coconut, so I use the regular kind. If you are immune-compromised and unable to locate organic coconut, you can use coconut water, or omit altogether. Edible lavender can be found in the bulk bin section of your local health food store.
